Vinomaker and I used to get 'second crop' from their vineyard on Oakville Crossroad and it made a sublime PG. Love the 'Les Trois Filles' grown there too. Yum. Several years ago we gathered over 50lbs. of chantrelles on the property. We're hoping we get lucky again this year. What I found was that they don't dry well (rubbery) and it's best to 'dry' sautee them to get the water out before adding butter and garlic. Man, I'm getting hungry. As for the Grgich, I realized that I've not had their Chardonnay for a while either. But it's like a elderly gentleman; stately and rich, lingering in the memory. I'm guessing Mike isn't making the wine anymore these days but he set the standard. It's no wonder he was the hit at Spurrier's Paris wine tasting! Chanterelles & risotto. Yum.
