		<description>Nice list of wines. And I have to agree on many, in particular Ölberg and Pettenthal are 2 exciting wines. Also the restaurant zur Kanne has a neat selection of wines. In particular some stunning aged B-W Rieslings. I had 1999 Pechstein there: 10 years old and no signe of age! 		<description>Wow, time to rethink German food.  Interesting combinations of ingredients and techniques up there.  That terrine is halfway tempting me to learn how to make galantines and whatnot...

All the trout talk reminded me of a passage from one of MFK Fisher&#039;s books when she was in Switzerland and visited a restaurant that kept trout in an aquarium in the dining room.  If you ordered &lt;i&gt;die Forelle&lt;/i&gt; one would be snatched out of the tank, filleted, and flash cooked tableside.</description>
