		<description>gosh, Jeff, thanks... and it was delicious, but it was just one of those throw-together pastas at the end of a hard work day for both of us... and after our exercise session. To find guanciale, you&#039;ll have to do an internet search. we bought some pieces last week in NYC, along with other Italian cured meats, at Buon Italia in Chelsea Market. But you could make a similar pasta with pancetta or applewood smoked bacon. the rest was just onion and garlic, tomatoes and spinach, for which you could substitute arugula or broccoli rabe. simple as can be. thanks as always for reading BTYH.</description>
